Sooo many questions about what to eat on a Gluten-Free Diet and I completely understand! I remember when we went gf back in February and we were eating lots of bean and cheese burritos and quesadillas! I don't have pictures for anything right now but I'm just going to list some ideas you can start with. As I come across pictures, I'll add them with recipes! Enjoy...
Breakfast Ideas (Breakfast for Dinner?)
Egg, Sausage, and Cheese Burritos (corn tortillas or make your own gf flour tortillas)
Egg, Sausage, Cheese and Pancake Sandwich (like McDonalds)
Chorizo and Egg with tortillas
Cereal and Fruit (add chia seed or flax seed in the cereal for protein)
Yogart Parfait
Oatmeal (make sure it's gf and not instant)
Smoothies (I always put spinach in mine-kids can't even taste it!)
Muffins (I have tons of recipes for all kinds and they freeze easily for a quick morning)
Eggs and Turkey Bacon
Ham and Cheese (and Spinach) Omelet
Hard Boiled Eggs with Grilled Ham (Nitrate Free is possible)
Gluten-Free Pancakes (topped with Agave Nectar, Fruit, Peanut Butter, etc.)
Chocolate Chip Scones
Lunch Ideas (Leftovers from Dinner Last Night)
Ham and Cheese Roll-ups (see pic from yesterdays post)
Green Salad (All kinds, add chicken, ham, egg, etc.) serve with crackers
Gluten-Free Pizza (individual sizes are fun for the kids)

Quesadillas
Chicken Salad with Lettuce or with Rice Crackers
Tuna Salad with Lettuce, Crackers, or Celery sticks
Egg Salad with Lettuce on gf bread (I'm yet to find one I love...)

Questions and Answers
Well, ever since I started this little blog I've gotten quite a few questions that I've answered personally to my friends and family but thought I'd share with everyone. If anyone has questions about anything I blog or the recipes, just let me know and I'm always happy to share...
Yellow or White Tortillas? Both, as long as the only main ingredient is corn, then it's ok. The tortillas I buy at Costco also have lime and some preservatives. If you don't want the preservatives, make them from scratch. It's easy to do. Buy masa, add water and a little salt and mix up with your hands to get a dough-y consistency then flatten and heat.
Organic or not? Yes, organic. I try to buy organic where it matters most. Check out the dirty dozen here. Some fruits and veges are more prone to soak in the pesticides than others and when staying on a budget, that matters. For example, I don't usually buy organic bananas because you don't eat the pealing anyways. But...if I find the organic ones on sale and it fits the budget for the week, I go for it. I also try to buy local (that's very important here in Hawaii since a lot of produce is shipped from the mainland). I go to Farmer's Markets.
Meats? I always buy organic chicken, ground beef, eggs, and milk. The pesticides are extremely harmful to our bodies especially our little kiddos.
What do we eat for lunch? A lot of the same stuff we used to eat, just changed up a bit. Instead of a ham and cheese sandwich, we eat ham and cheese with crackers or something I call "ham and cheese roll ups". I lay the ham down first, put a piece of cheese, some lettuce or spinach, a carrot stick (any veggie we may have) then roll it up and put a couple of colored tooth picks in it to keep it in place. The kids dip them in ranch or Italian dressing. They love them!
Our bedtime routine? Keep it the same everyday as much as possible or we let him know of the change ahead of time. With summer ending, you can imagine the routine has been interrupted. We would let him know in the morning of what we are going to do for the day and make sure there was time to rest sometime during the day. If we got home late, we would help him as much as possible get into his jammies and then lay with him until he was asleep or almost asleep. We always lay with him at night, pray with him and talk to him about the day. We do that with all our kids. It gets exhausting at times but sometimes it's my favorite time of the day listening to what their best part was!
